My Birthday ... With Alan Wong!

(It's Anabel) Alan Wong is a fairly famous gourmet Hawaiian-infused chef. He started his cooking career on his own, so, I think he likes young chefs.  
    We'll start with my contest. It was a healthy lunch contest for keiki (kids in Hawaiian). I was in the top three for my Eggs In A Confetti Nest (there is a recipe for that in our blog). Then I was asked to go on T.V. with ... (drumroll, please) ... Alan Wong!!! I had told Alan Wong about my mom's diabetes. And how we wanted to make sweets, but mom couldn't eat them, so we were always excited for birthday sweets. Well, he liked me and invited us (me, my mom, and Josuna) to make gluten and sugar free chocolate cupcakes at his restaurant! I will make a post for this recipe. They were super yummy and high-quality. (We tried remaking them, but they weren't quite as good.) So, he showed us around, gave us some li-hing mui tomato spoons to try, and let me borrow ramekins for my contest. It was very fun.
    Later on, we went to my lunch contest at the zoo. Sadly, I lost to a smoothie with tomatoes in it. Grrr. But, I got a signature and hug from Cat Cora! (Plus, we literally have a cat named Cora.)
 Anyway, now it was my first decade birthday and we wanted to do something special. I had only a small birthday celebration with my family. This was so we could save the money to go to Alan Wong's! My mom emailed Alan Wong about it. He seemed very happy.
      A couple days after my birthday, we went. It was very nice. We were surprised to see that all the waiters knew we were coming. They all said "Happy birthday, Anabel!" I had a special menu printed and signed for me. It was amazing.
This is what I ordered:
Fresh foccacia bread with garlic butter
H.R. Ceaser Salad
Twice Cooked Short Rib, Soy Braised And Grilled "Kalbi" Style
Parmesan Garlic Mashed Potatoes
Coconut Replica
Macadamia Nut "Blondies" 
   In the middle of the bread, Alan Wong came to say hi to me! He brought a tomatoe soup and foie gras crustini dish. He stayed with us for about 15 minutes. Afterwards he didn't even take pictures with other people! He also offerd to show me how to make the Coconut Replica because I was interested in it. Still waiting on that, actually. 
All in all, it was a terrific experience.

'Zuki 'Getti

Special Equipment:
  • Vegetable Spiralizer
  • Slow Cooker (Crockpot)

Ingredients:
-Sauce
  • 1 can spaghetti sauce
  • 1 can diced tomatoes 
  • 1/2 lb. ground turkey
  • 1 medium onion, diced
  • 1 small zucchini, spiralized
  • 1/2 tsp of basil, finely chopped
  • 1 cup mushrooms, sliced
  • 4 leaves fresh oregano, finely chopped
  • 1 garlic head, peeledand finely diced
  • 1 tsp salt

-Zucchini Noodles

  • 1 large zucchini

-Toppings (Optional)

  • Parmesan cheese
  • Other
Steps:
-Sauce

  • Mix all sauce ingredients
  • Slow cook on high for 4 hrs
-Zucchini Noodles

  • Spiralize all zucchini
-Serving

  • Grate parmesan cheese
  • Serve zucchini noodles or spaghetti noodles with sauce  
  • Top with parmesan cheese

Mini Falafls




Ingredients:
-Falafel:
  • Canned chick peas (garbanzo beans)
  • 1 egg from our own chickens
  • garam masala powder
  • pinch of coarse red 'alaea salt
  • lots of fried onion
  • oil
-Tzatziki Sauce:
  • Homemade yogurt
  • Cucumber, chopped
  • Parsley, chopped
  • Tahini
  • Half a lime, juiced
  • A pinch of raw garlic
 -Other:
  • Mini Falafel bread

Steps:
  • Fry garlic and onions
  • Add other falafel ingredients
  • Mix tahini and yogurt
  • Mix in other tzatziki sauce ingredients
  • Roll falafel into balls and fry in oil





Avo Choco Pudding

Don't tell your kids it has avocado in it until AFTER they've had it!

(unless they like avocado)

Ingredients:
  • Avocado
  • Cocoa powder
  • Sugar
  • Coconut milk
  • Vanilla
  • Cinnamon
  • Raspberries, blackberries, other berries, or other chopped up fruit
  • (Optional) Whipped cream
Steps:
  • Put everything (except berries) in blender and blend
  • Garnish with fruit and whipped cream
Did you know? Botanically, avocado is actually a fruit.

Anabel's Vegetarian Slow Cooker Lasagna


Ingredients:

  • 1 package tofu, diced
  • 1 cup  diced onion
  • 1 jar tomato sauce
  • 1 can tomato paste
  • 1 cup non-fat cottage cheese
  • 2 cups shredded mozzarella cheese
  • 1 box whole wheat lasagna noodles
  • 1 small zucchini, thinly sliced
  • 1 package frozen chopped spinach, warmed up, squeezed 
  • Fresh oregano and rosemary
  • Grated Parmesan cheese
Steps:
  • Add diced tofu to tomato sauce 
  • And oregano, rosemary and tomato paste
  • Add onion and garlic
  • Stir well
  • Heat sauce in sauce pan 
  • Add cottage cheese and mozzarella together
  • Grease a quart oval slow cooker
  • Put a layer of noodles in slow cooker
  • Top noodles with half cheese mixture
  • More sauce, another layer of noodles and cheese
  • Layer spinach and zucchini over top layer of cheese
  • Repeat 
  • Top with final layer of noodles
  • Pour remaining sauce over top
  • Sprinkle with Parmesan cheese
  • Cover and cook on low for 4 hours

Icebox Strawberry Cake

Ingredients:
  • Whipped Cream
  • Fresh sliced strawberries
  • Graham Crackers
  • Sliced Almonds
Steps:
  • Cover bottom of container with graham crackers
  • Smooth whipped cream on top of graham crackers
  • Top with strawberries on whipped cream
  • Smooth whipped cream on top of sliced strawberries
  • Repeat steps until container is full (end with whipped cream)
  • Decorate with extra strawberries, sliced almonds, and crushed graham crackers
  • Put in refridgerator for 2 hours
  • EAT! Yum!
