Ingredients:
1 small onion, sliced
6 to 8 carrots, sliced
1/2 inch ginger, finely chopped
2 cloves garlic, peeled and finely diced
2 to 4 cups chicken broth
1 can coconut milk
Shoyu to taste
A garnish of homemade yogurt
Salt and pepper to taste

- Put everything but the coconut milk, homemade yogurt and shoyu in slow cooker
- Cook on low for six hours
- Blend soup with Vitamix or food blender
- Add coconut milk
- Put in refrigerator until cold
- Add shoyu to taste
- Garnish with homemade yogurt
- (Optional) Add spicy hot sauce
