Award-Winning Carrot Ginger Soup

Ingredients:


1 small onion, sliced

6 to 8 carrots, sliced
1/2 inch ginger, finely chopped
2 cloves garlic, peeled and finely diced
2 to 4 cups chicken broth
1 can coconut milk
Shoyu to taste 
A garnish of homemade yogurt
Salt and pepper to taste

Steps:                                                                                                   look at my famous dishes!

  • Put everything but the coconut milk, homemade yogurt and shoyu in slow cooker 
  • Cook on low for six hours
  • Blend soup with Vitamix or food blender
  • Add coconut milk
  • Put in refrigerator until cold 
  • Add shoyu to taste
  • Garnish with homemade yogurt
  • (Optional) Add spicy hot sauce
