Palak Tofu Dinner

Palak is kind of like stewed veggies from India. Traditionally it is palak paneer (spinach and cheese), but our recipe is vegan and uses local veggies.

Ingredients:
  • Kale
  • 1 Can of coconut milk
  • 1 Box firm tofu
  • 1 Avocado
  • 1 Red bell pepper
  • 1 Cucumber
  • 1 Big Beefsteak Tomato
  • Rice

Steps:
  • Sauté kale
  • Cut tofu into cubes
  • Add coconut milk to kale
  • Mix tofu into kale
  • Cook together for a minute or so
  • Cut and mix veggies
  • Cook rice
  • Serve hot
